Of Food and Happiness: Vanessa’s “Onion and Goat Cheese Tarte Tatin” Recipe

I am very excited to introduce my Foodie section, given that I am an avid food lover, which has not really translated into much of a cooking talent…Hmmm…Well, that’s why I’ve been blessed with my own personal chef, namely dear hubby, who can cook his sexy self off…and a pretty phenomenal younger sis, who also took the entire domestic gene pool of the family…Oh well…
Well, today’s Vanessa’s 25th birthday, and in honor of her birthday and her recent nuptials with a pretty phenomenal guy too (Salut Herman!!), here is a very Frenchie recipe that she taught me not too long ago… It’s the “Onion and Goat cheese Tarte Tatin“, and no, I can’t pronounce it either…
Preheat the oven at 350 degrees Fahrenheit. Start by cutting your onions in large chunks. Brown the onions in a bit of olive oil. When they start getting a bit of color, then add about 2/3 cup water and the Knorr cube.
Cook the onions until caramelized, but do not let them dissolve.
In the meantime, butter the bottom and side of a round cake pan. Sprinkle the brown sugar at the bottom of the pan. Spread the onions on top of the brown sugar, and then spread thinly cut slices of goat cheese on the onions.
Cover the preparation with the pie crust, and make sure to tuck the sides down inside the pan.
Bake in the oven at 350 degrees Fahrenheit for 20 minutes.
Serve hot as an appetizer accompanied with a fresh house salad.
